A mummy of teenagers....

Being a mummy of teenagers means ....
  • When the boys come home filthy  (& deliriously happy) from a week away at SU camp my first thought is to make them something to eat.... 
Chocolate Marshmallow Delight
  • Jumping into the car & driving from one end of Ireland to the other (that's over 5 hours driving) to watch son number one in the Irish Rowing Championships
  • in the rain (of course!)
  • An endless battle (which I never win) with the laundry pile...
  • More cooking... 
    • Barbecue Pineapple Chicken with Wild Rice & Leeks
    • Squeezing in a little bit of sewing when everyone has gone out

    • More baking....
    Making Millionaires Shortbread

    • And, if I have any free time left.... trying to catch up on all the wonderful stitchy stuff in blogland!
    I hope you have had a great, fun-filled week. I'm so sorry I haven't been around, but I'm off now to see what you all have been getting up to...
    In the meantime, if you fancy the look of the Millionaires Shortbread, here's the recipe:

    Preheat the oven to 160' C / 325' F
    Ingredients:
    SHORTBREAD: 
    • 225g Self Raising Flour
    • 150g Butter
    • 75g Caster Sugar

  • CARAMEL: 

    • 1 tin (397g) Condensed Milk
    • 150g Butter
    • 100g Caster Sugar
    • 15ml Golden Syrup
    • 2 drops Vanilla Essence
    TOPPING:
    • 150g Dark Chocolate

    1. Shortbread: Mix flour & sugar & rub in butter. Tip into a 30cm X 20cm swiss roll tin & press down evenly. Bake for 20-25 mins in preheated oven. Leave to cool in tin.
    2. Caramel: Melt butter, sugar & syrup in a saucepan. Add condensed milk & vanilla essence & simmer for 6 mins, stirring continuously. Pour over shortbread base & leave to cool.
    3. Topping: Melt chocolate and pour over caramel. Leave to set (if you can resist!) & cut into squares

    Monday Motivational Muffins

    Hello there!
    I hope you had a lovely weekend.... here on the Causeway Coast things were busy, but I guess for most of us that is the way of it. In between various drop-offs & pick-ups, laundry, cooking, dog-walking etc. I managed to get a wee bit of (much-needed) gardening done..
    I also made these scrummy banana & chocolate muffins. 
    They are a big favourite in our house & a great way to start the week.....so here's the recipe if you fancy the look of them.....
    1) Preheat oven to 200' C/ 400'F/ gas mark 6 & line a muffin tin with muffin cases
    2) Mix the following dry ingredients in a large bowl:
    • 360g plain flour
    • 240g golden caster sugar
    • 2tsp baking powder
    • 1tsp baking soda
    • pinch of salt

    3) Mix the following wet ingredients in another bowl:
    • 3 large eggs lightly beaten
    • 115mls vegetable oil
    • 3 large bananas mashed
    4) Pour the wet mixture into the dry & fold together using as little folding as possible (don't worry if it seems lumpy, it will be grand!)
    5) Fold in 100g dark chocolate & 100g white chocolate chips (or all dark or all white if you prefer - avoid milk chocolate as it is too sickly with the banana)
    6) Spoon the mixture into the muffin cases, filling about 3/4 full (so they won't splurge over the sides when cooking)
    7) Bake for 20-25mins until golden. Remove from the tin & cool on a wire rack for as long as you can resist (approx 10 seconds in our house)
    8) Serve warm with a knob of butter & a lovely cup of tea!

    Now it may be just a sugar rush, but after eating one (or two) of these I'm ready to tackle some exceptionally late sewing projects which I need to do.... So for the rest of this week I'm going to try to complete one each day  & was wondering if you you have any stitchy stuff which you need to do? If so, would like to join me?  This is my list:

    • Make a fathers day gift for my husband....something for his surgery
    • Post off some bee blocks
    • Finish a secret gift for someone in our Care Circle bee

    My plan is that each day I will post the finished project so you can keep tabs on me! If you feel up to the challenge let me know & I'll check up on you too! If you still need some motivation here's something someone much wiser than me once said:

    {friendship} february: a tastey tagine

    Hello there!
    How has your week been? Life can be so busy, can't it? But for a few moments take a seat & put your feet up & enjoy a wee chat with my friend Annabella who not only sews beautiful things but also cooks delicious food..
    Thank you to Karen for letting me loose on her blog today as part of her {friendship} february series. I`m Annabella and I blog over here normally. For the last 10 years, I have lived in Marrakech, Morocco which is at the far North West of Africa.  Things get pretty laid back here.
    If you are creatively inclined, it is a wonderful place to spend some time. The light is incredible, it is crazy colourful and vibrant and if you love photography or quilting there is inspiration wherever you look. I love both!

    Now it`s no secret that I love my food and it`s a pleasure to be living somewhere where food and mealtimes are so important. Mealtimes, particularly lunch, remain a time when the family usually gathers. While a working lunch in the city is becoming increasingly the norm, shops shut, tools are downed and offices close while many people head home to eat with their families. So I have a super simple but tasty and authentically Moroccan dish, which I would love you to try. It`s great for cold winter days. My mother in law has taught me a few Moroccan dishes and she has given them the thumbs up, so I hope you like this one too. It`s one of the most famous Moroccan dishes and can be cooked in a tagine (a conical pot) or if you don`t have one - then put it in an oven dish with a cover.
    Chicken Tagine with Lemon and Olives
    Serves 4
    For the Chemoula Marinade
    1 tbsp. of flat leaf parsley
    4 cloves of garlic (crushed)
    1 tspn. of ground ginger
    1 half tspn. of cinnamon powder
    1 tspn. of ground cumin
    1 tspn. of paprika
    salt and pepper
    A couple of pinches of saffron soaked in a couple of tablespoons of water  for half an hour*optional*

    For the Tagine
    Large chicken  (jointed or 2 breasts and 2 legs or 4 breasts)
    1 medium grated onion
    2 large tomatoes (peeled and quartered)
    2 medium potatoes (peeled and sliced)
    2 - 3 tbsp. olive oil
    A handful of green olives 
    Half a preserved lemon

    Place the parsley and garlic in a food processor and blitz until finely chopped or if you fancy flexing your muscles, do as my mother in law would do and give it a good bashing with a pestle and mortar. 
    Place the parsley mixture in a large bowl and add the marinade spices, the saffron water (if using otherwise a couple of tablespoons of water) and a tbsp. of olive oil. Mix well. 
    Place your chicken pieces in the bowl, roll up your sleeves and rub the spicy paste all over the chicken. I would advise wearing plastic gloves unless you want orange hands! Put the chicken, half a cup of water and grated onion on the base of your tagine or oven dish.
    Take your preserved lemon and remove the flesh.  Slice the rind.  It should look like this. (If you like a particularly lemony taste (I do but Mr LRP doesn`t), you can simply slice it leaving the flesh in.) 
    Arrange the sliced potatoes on top of the chicken mixture and place the tomatoes in the centre. Sprinkle the lemon slices on top. Pour a good glug of olive oil over the potatoes. Season the potatoes with salt and pepper. Don`t add too much salt as the olives and lemon are already salty.
    Cover with the tagine lid or if you are using a baking dish, some aluminum foil.

    Leave to simmer on a low heat on the cooker top or if you are using an oven dish, place in the oven at 180 C or 355 F with a lid, or cover with aluminium foil. Now go and put your feet up.

    After 20 minutes, you should have more liquid as the tomatoes cook. Push a couple of the potato slices aside and baste the potatoes and tomatoes with the liquid. Push the lemon slices down into the cooking liquid. Put the slices back.

    After another 20 minutes, add the olives.  Use as many or as little as you like.  There are no rules. Leave for another 15 minutes or until the chicken is thoroughly cooked!  The sauce should have reduced and thickened.



    Moroccans would eat this with bread and side salads.  If you fancy adding other vegetables then that`s fine. You can add any vegetable you like - sliced carrots, peas, whatever takes your fancy.

    {no sew} Sunday

    Hello there!
    Hope you had a great weekend! Although Saturdays in the Hamilton household are completely crazy, our Sundays always follow the same format....
    Rowing run with Angus (he's the first one facing you)
    Church & then Sunday lunch:
    Yummy deserts:
    A visit from granny & grandpa (& seriously competitive game of Chinese Checkers!!)
    Persuading Hannah to do some revision (or is she on facebook????)
    Selecting a nice bottle of wine
    And chilling out.....
    If you like the look of the desert, its called Eton Mess... its super quick & easy to make & super delicious....

    INGREDIENTS:
    250 mls whipping cream
    50g meringue nests/ meringues
    250g strawberries 
    1. Whip the cream to a soft peak stage (not too much as it thickens when you get to step 2)
    2. Crumble the meringue into approx 1/2" chunks (not too fine or it will disappear) & fold into the cream
    3. Hull the strawberries, set aside some for decoration & mash the rest slightly with a fork & fold into the cream mixture
    4. Spoon into individual glasses / glass bowl & decorate with remaining strawberries
    5. Serve relatively soon as the meringue will start to disintegrate
    That's it! You can substitute the strawberries for whatever soft fruit you fancy....my favourite is raspberries & a wee sprinkling of grated dark chocolate.....mmmm
